Steel's thermal conductivity is 18 times greater than ceramic, therefore it has far more heat retention and heat transfer. I personally will never go back to a pizza stone for making pizzas after using my steel after just 1 use! Care Instructions: This steel will last you a if cared for properly, so let's learn how to care for it! The steel is suitable for baking foods, so we need to prevent it from rusting. -Your baking steel never belongs in the dishwasher -Never allow to air dry, there is the danger that rust will form in a very short time, which has to be removed first. -If you choose to use detergent for cleaning, the steel should be dried and oiled immediately afterwards. -Storage: Store dry and lightly oil before and after use. Before your first use: -The steel should be treated with vegetable oils. This protects against rust. Distribute a little bit of oil on both sides very thinly and then rub it down again with a clean lint free cloth. -Now heat the oven to at least 200 Degree C/400F and bake the oiled baking steel for about one hour. Then turn off the oven and allow the baking steel to cool in the oven. -Note: your steel will change colour after seasoning. Overtime the darkening will become universal and eventually become almost black in colour. -If rust has formed, it can be easily removed with very fine sandpaper or a steel wool pot cleaner. Afterwards, it is necessary to oil the dry baking steel immediately in order to prevent further rust formation.
